To access UltraEdit's settings, click Settings in the Advanced tab. You'll see configuration options are by category.
To search for a specific setting, use the Find search bar at the top left of the configuration dialog. When you enter a keyword here, any configuration pages containing that keyword will be filtered in the tree area on the left:
