Clicking Set font will open the "Font" dialog where you can choose the font that the editor will use for normal plain text editing, as well as the style and size.

The "Font" dialog includes a list of all installed fonts on the system as well as the available styles for each. It is highly recommended that for plain text editing, a fixed-width, monospace font (such as Consolas or Courier New) is selected. Using proportional fonts like Arial or Lucida with a plain text position-based text editor like UltraEdit will likely cause caret positioning and ruler issues.

The Script drop down allows you to choose a different code page script for the font, based upon the scripts the font supports. In general, it should not be necessary to change this setting since UltraEdit will automatically detect a file's encoding / code page on open and automatically select the correct script for the font as required.

Additionally, you can quickly increase and decrease the size of the active font for a "zoom" effect by holding the Ctrl key and spinning your mouse's scroll wheel. This will globally change the font size for all open files.
