To access UltraEdit's settings, go to Advanced » Settings. You'll see that configuration options are divided by category.

To search for a specific setting, use the Find search bar at the top left of the configuration dialog. When you enter a keyword here, any configuration pages containing that keyword will be filtered in the tree area on the left:
